Born into a sixth-generation winemaking family in Cornedo overlooking Bolzano, in the heart of the Dolomites, Chef Theodor Falser has cultivated a life deeply connected to nature, tradition, and authenticity. His culinary journey began at the tender age of 15 and has since spanned the globe, with experience in some of the world's most prestigious five-star hotels across Switzerlang, Dubai, Ecuador, Oman, China, and Malaysia.

Chef Theodor was the creative force behind "Taste Nature" at the acclaimed Johannestube in South Tyrol, an innovative dining concept that redefines Alpine gastronomy. His philosophy is clear and uncompromising: absolute regionality. Every ingredient used in his kitchen is sourced exclusively from within the Alto Adige region. There is no olive oil, no citrus, no saltwater fish, no exotic spices, and no chocolate, only the rich, diverse bounty of his local land.

Collaborating directly with mountain farmers, Alpine fishermen, and sustainable livestock producers, Chef Theodor crafts dishes that are a true reflection of the environment and heritage of his homeland. His deep respect for seasonality and local traditions has made him a pioneer in the European sustainable food movement.

In the summer months, he takes this concept even further by relocating his kitchen to 1,800 meters above sea level in the heart of the Carezza Forest, where he operates entirely off-grid, without electricity, bringing guests an immersive and elemental dining experience.
